Why not an American Dad or Simpsons on Netflix?

I wanted to ask why there are only Family Guy and Rick and Morty on Netflix and no Bobs Burgers or American Dad, Simpsons etc.

Netflix did not purchase the license for your desired series. So they are not allowed to broadcast the series. Disney + rules the Simpsons.

Because the streaming rights for the Simpsons in Germany, for example, are owned by Disney and are therefore run on Disney +.
