When it comes to finding a good (financial) compromise, more memory and up-to-dateness would be more important to me than performance!
Apple supports devices for about 5 years, which means that older devices will be withdrawn from support (updates!) Earlier. In addition, the memory can't be expanded and a memory that seems casually enough today will be full faster than you think, especially in 5 years! On the normal sizes (9.7 or 10 inches) you can already read a DIN A4 sheet, a mini would certainly be too small!
