Is there a fighting technique that can defeat the opponent without injuring him?

I saw the series Cobra Kai on Netflix and there was shown a fighting technique in which you aim at certain points so that the opponent can't move for a short time. The opponent is not injured and I don't think they are vital points. In any case, I asked myself whether there's this technique or another that does the same thing.

These techniques exist under the name Dim-Mak "extinct" and kyusho-Jitsu "is offered in courses" but, and now this is coming, the people who developed it were so fast that hardly anyone can imitate them.

That's why arts are dying out, they don't spread because they're rubbish or just too heavy.

And just by the way, these are inner arts that you are traditionally introduced to, such as dream dancing in boxing or Kyusho-Jitsu, which you could also find in Jiu-Jitsu.
