I have Netflix on my iPad and would like to clear my history. However, I can't find a field anywhere where that works.

Do you mean recent movies and series? These are saved in the Netflix account.
At least in the Android app there's the option "Account" under "More". If you tap on it, the Netflix account will open in the browser and you are already logged in.
At the bottom of the page, find your Netflix profile and select it. There's the title history item, where you can view and delete your history.
Alternatively, you can manually go to the Netflix site, log in and open the account settings.
