I think the option has not always been on netflix watched and no blu ray player used that's why I do not know.
the thing is, I was yesterday the movie warcraft the beginning want to see and put in the blu ray player but could choose stereo sound niregends. Because I have the blu ray player connected via hdmi to the television which in turn is connected via an optical output (via a converter or adapter or whatever you call it) to a stereo amplifier which passes the signal to two stereo standboxes.

You can select the audio track in the BluRay menu under Option / Audio.
The problem will probably be, if one looks 5.1 on stereo, the conversations in the film are quite quiet, the background noise or background noises are very loud.
