Unfortunately I do not have enough time to watch all series on Netflix that interest me. It took me a long time to watch 4 blocks and that only has 6.7 episodes per season. Even if I could watch 24/7 series, I would not be able to keep up with that because there's just too much material left. Proposals? Should I just pick the best of the best?

Yes, probably no different. You can find out what you really find the best. If you work normally you have to take care of a family, you have an apprenticeship, you do not have the time to look at a lot of shows. I don't have, too.
It's not a race. Just leave you time. Besides, it's just entertainment and unimportant for your life. So do not worry about what it is not.
