Can you see when Netflix was last watched?

I know that you can see what was last viewed on Netflix, but can you see when a profile was last used and if so is it possible to deactivate / outsmart this function?

No, but you can see which devices are currently active (but you have to be really hobbyless, especially on netflix.com + by chance you also have to watch something at the moment - so unlikely).
