How are films handled realistically?

A few days ago I saw through the Netflix series "Narcos: Mexico", after seeing Narcos. Now I ask myself the following question: How are the injuries represented so realistically on the screen (stabbing, gunshot wounds, torture injuries), since it is not a cut-off sequence? Everything edited later, body parts replaced by spurious or how can you imagine?
