That would work with a VPN. If you are in Spain, you have a Spanish IP address and therefore the Spanish catalog.
There are Netflix Originals with German synchro / German subtitles, but there's not much that has that.
VPNs, however, violate Netflix guidelines.
As a vacationer, however, you should be able to access the German content for a limited period of time. That was decided by the EU. But that only applies in the EU. So Spain yes, USA no.
So you can't stay there in Spain for years and then watch German Netflix all the time. It doesn't help to set your Netflix to German either. Because actually Netflix does not have a license for the German content for Spain.
