With subtitles alone, you may be able to learn a few words, but not grammar. It helps if you learn a language, but that alone won't teach you to speak.

Also, a lot of the subtitles don't match the soundtrack at all, so I'd be careful. Often there's only a corresponding translation, literal translations do not always make sense in another language. But what I've also often observed is that the subtitles say something completely different from what people say. I observed this, for example, at La Casa de Papel (House of Money) on Netflix, in Spanish with German subtitles. I believe that the German subtitles are intended for the deaf and do not translate Spanish but contain the text of the German synchro. But it is often very different from the original because the lip movements have to match. So I would be careful about that.
