Someone has to explain it to me😂 and I find it somehow confused😂 it is so that madam red is killed by grell in the first season and ciel and Sebastian know the right Shinigamai Grell only after the episode but will be in the second season in the third episode the madam red mentions nothing of anything (can't remember what it was) but in the following they also know who Grell is. Apart from that, I don't get why ciel is alive again in the 2nd season because I thought he would have died at the end of the 1st season

As Salmon Roll wrote, the end of the first season and the entire second season is anime original. But this only really becomes relevant if you continue with Book of Circus, since the season starts again in the middle of season one, which can be confusing.
Specifically to your question: In season 2 it turns out that Claude stole Ciel's soul before Sebastian could eat it. Sebastian can "steal" Ciel's soul, but Ciel is subsequently lacking essential memories - such as the death of Madame Red or (in this case much more relevant) the fulfillment of his contract.
Maybe spoilers (since I don't know in which episode exactly this happens): That's why Sebastian enters into a deal with Claude to make the newly presented household the alleged perpetrators so that Sebastian can "fulfill the contract with Ciel" again.
